 那么为什么茶店子牛肉这么好吃呢?原来啊,茶店牛肉的材料特别讲究,牛肉来源于当地的养牛专业户,一般都是当天清晨,养牛户现杀现宰好后选择上等牛肉送来,这样的肉不但新鲜而且肉质相当好。

而做法讲究就是茶店牛肉美味的另一重要因素了。记者在餐馆里见识了师傅干烧牛肉的全过程。干烧时,将猪油烧到八分热,加入整个的小红尖椒、大蒜和姜片、花椒等,待佐料烧出香味后掀至一边,再将切成片的牛肉放入油中用中火慢慢烧,油的用量以浸过牛肉为益。牛肉事先还要汆成七分熟。牛肉切片也是有学问的,师傅告诉记者,切的时候要逆着牛肉的纹路,这样切出来的牛肉才会即均匀又整齐。一般来说牛肉香气四溢时,就可以放盐、味精、胡椒等,依客人口味来。茶店的牛肉餐馆还会在加盐之前加一点点糖,烧出的牛肉会更有嚼劲。

牛肉在端上桌之前还会搀上薄酸萝卜片,上面再撒上几跟绿油油的香菜。嚼一块牛肉,再喝一口包谷酒,那真是别有一番滋味美在心头。香喷喷的干烧牛肉,再配上黄澄澄的土家包谷饭、浓浓的和渣、红艳艳的渣辣椒,那感觉又怎是一个“美”字了得!

仁当牛肉

(Rendang daging sapi)

香嫩咸辣的牛肉在舌头上融化,使仁当牛肉(Rendang daging sapi)成为世界上最著名的印尼美食之一,甚至被评为世界上最美味的食物。如果你来印尼没有品尝过仁当肉,那真是太遗憾了!

仁当肉分为两种,干仁当(Rendang kering)和湿仁当(Rendang basah)。干仁当是米南佳保(Minangkabau)或巴东(Padang)的特色美食。他们的仁当颜色比较深,干燥和油腻。而爪哇的仁当比较湿,颜色会有点棕色,肉稍微硬一些。

用料Bahan

- 1公斤牛肉(1 kg daging sapi)

- 3个椰子,取出浓椰浆和稀椰浆(3 butir kelapa, diambil santan kental dan santan encernya)

- 4片柠檬叶(4 lembar daun jeruk)

- 3根柠檬草茎,敲破(3 batang serai, memarkan)

- 4个Kandis罗望子(4 butir asam kandis)

- 100毫升食油(100 ml minyak goreng)

- 5 克盐(5 gram garam)

- 60克红葱头(60 gram bawang merah)

- 50克白蒜(50 gram bawang putih)

- 250克大红辣椒(250 gram cabai merah besar)

- 100克高良姜(100 gram lengkuas)

- 50克石栗(50 gram kemiri)

- 2克丁香(2 gram cengkeh)

做法步骤

- 把所有调味料放入搅拌器打成泥状。

- 倒入少许油在平底锅里,油溅热后,放入调味料炒香。

- 放入柠檬草茎,柠檬叶,Kandis罗望子和盐,搅拌均匀。

- 倒入浓椰浆和稀椰浆,煮沸,放入牛肉。

- 用小火煮几个小时,直到牛肉变嫩,颜色变棕色。

小贴士:

- 不要使用大火,须使用小火煮几个小时。

- 制作干仁当煮5-6个小时

- 制作湿仁当煮约4个小时。
